Feast at Noma’s pop-up in Copenhagen

Getting a table at Noma, Copenhagen’s two-Michelin-star restaurant and four-time winner of the Best Restaurant In The World title, is as tricky as predicting the weather this winter. Which is why we’re excited about the pop-up occupying the Noma restaurant site for 13 weeks while the crew, including award-winning chef René Redzepi, take their unique Nordic gastronomy to Sydney until 16 April.

The pop-up, which opened last week and is called 108, is the brainchild of Redzepi and Noma staff chef Kristian Baumann, so simple Danish dishes using locally sourced ingredients are still the order of the day. Using the Noma kitchen as a training camp before 108 opens at its permanent home around the corner in the spring, Baumann has created a menu of hearty dishes, such as salt-baked celeriac with pickles and hay cheese, grilled pork neck with green gooseberries and fresh pine, and crispy sweet potatoes with egg cream and yuzu granite.

Although 108 has been taking bookings for its dinner-only service since December, there are walk-in tables available every evening – a pop-up definitely worth flying for.
