Easter is just around the corner, meaning you can legitimately faff around in the kitchen trying to create fondant-shaped bunnies and cute chick motifs without anyone mocking you (too much). Traditionally, Easter baking is for kids but adults can have fun too and the internet is brimming with incredible spring-themed creations that are as beautiful as they are technically challenging. Firstly, this super-easy Easter basket cake, made with mini eggs and a circle of Kit Kats (click here for a recipe). Far simpler than any of the recipes above (you can even use a shop-brought cake as the base), it still looks great. The burrowing bunny is an extra, but could easy be fashioned from a combination of marshmallows and strategically-placed Smarties.

... And secondly, these aren't strictly cakes but they're beautiful all the same. And healthy. For a low-carb take on the Easter egg, these rainbow-coloured jelly eggs are simple to make and completely delicious. Grab yourself some jelly mix and an egg-shaped mould and you're good to go.
