Swedish apple crumble cake

Following our Red Cottage experience which showcased food from Skåne in Southern Sweden, we bring you this recipe for Swedish apple cake. Surprisingly easy to make, it's the perfect comfort dessert as the nights draw in.

Ingredients

  • 4-5 apples, peeled and diced
  • 2 tsp cinnamon
  • 3 eggs
  • 4 cup granulated sugar (1 cup = equivalent to 1 espresso cup)
  • 150 margarine, melted
  • 4 cups bread crumbs
  • 1 cup ground almonds
  • 4 ground bitter almonds
  • 2 teaspoons baking powder
  • 2 tbsp plain flour
  • 1/2 cup cream

Method:

Step 1: Mix the diced apple with cinnamon.

Step 2: Grease and sprinkle the bread crumbs into a large round cake tin.

Step 3: Beat the eggs and sugar together. Stir in margarine, and then fold the remaining dry ingredients gradually, making sure everything is mixed well, before adding the cream.

Step 4: Fold in the apple cubes and pour the batter into the mold. Bake in the lower half of oven (heated to 170 degree) for about 50 minutes. Serve the cake with whipped cream or vanilla sauce.
