It's bright, colourful and large - the signs of every indulgent and naturally unhealthy cake. But bakers at the Eden Project in Cornwall have cooked up what could be the world's healthiest.

The one-off cake is packed with pomegranates, blueberries, bananas, apples, carrots and most of all baobab, a 'superfruit' from Africa.
Baobab astonishingly offers, gram for gram, more calcium than milk, more iron than steak, more fibre than wholemeal bread and is six times richer in vitamin C than oranges.
For that reason, each serving (approximately 208g) of this mammoth fruit cake provides 59.9% RDA of Vitamin C, 47.8% RDA of potassium and 32.2% RDA of Vitamin A. It’s also low in saturated fat, low in salt and contains only naturally occurring sugars.
The cake marks the start of the inaugural Baobab Superfruit Week (until 13 October 2013) at the Eden Project which grows the fruit in its Rainforest Biome.
You can buy baobab in powder form to sprinkle over foods and mix into drinks. The trade in baobab also helps to relieve poverty in Africa by supporting harvesters and their families.
