Chef creates the world's cheesiest pizza featuring 99 cheese varieties

Most of us have probably only eaten a four cheese pizza. So can you imagine what one with 25 times the amount of cheeses tastes like?
An Australian chef has created the world's cheesiest pizza with 99 cheese varieties, from mozzarella to one covered in grape skin.
Johnny di Francesco, who runs Melbourne’s famous 400 Gradi pizza restaurant and was crowned 'Best Pizza Maker' at the Pizza World Championship in Italy in July this year, has pushed the boundaries by creating a dish with just under 100 cheeses carefully selected from Australia and around the world.
Named 'The Super Cheese', Di Francesco tried out six different recipes before nailing the perfect one.
He first creates a special paste by melting down 94 cheeses in a large pot and then blast chills it to form a solid block of cheese. He then covers the pizza dough in a thin layer of the cheese blend and cooks it for 45 minutes.
The pizza is then topped with a handful of five fresh cheeses - fior di latte, buffalo mozzarella, goat cheese, ricotta and shaved raspadura.
Rather surprisingly, the gastronomic wonder was created in celebration of the new Teenage Mutant Ninja Turtles film, where character Michelangelo has a fondness for pizza.
So how does it taste? A Guardian blogger wrote: "Fantastic. Di Francesco has created a balanced and surprisingly nuanced pizza. It sounds like a supersized hot mess, the kind of novelty cuisine you might see on a menu at a suburban pizza and ribs joint, but it is anything but...Crucially, I didn’t walk away from Gradi feeling as though I had just eaten 99 cheeses. The topping is generous without being excessive and because the super cheese is so concentrated little is actually needed. And the bases are delectably light."
Johnny di Francesco's family originate from Naples and is considered to be the first Australian chef to train in the region.

Ingredients
- 27 oz. pizza dough (for an 18 pie)
- 14 oz. fresh mozzarella (to cover the pizza with thin slices)
- 14 oz. white cheddar cheese, shredded
- Shredded mozzarella (to cover the dough)
- 10 oz. Gorgonzola cheese
- 14 oz. Parmigiano-Reggiano cheese, finely sliced
- 10 oz. caciocavallo cheese, finely sliced
- 12 oz. Gruyre cheese, shredded
- 7-8 slices of mild imported provolone cheese (sliced to cover pizza)
- 10 oz. Romano cheese, shredded
- 10 slices white American cheese
- 6 tsp. olive oil
- 1 tsp. red pepper
- 9 slices red ripe tomatoes, drained well
- 9 oz. pizza sauce
- 10 large leaves of fresh basil
- 1 tbsp. fresh oregano
Method
Stretch out the dough on a fi ne-mesh screen. Cover with sauce. Cover the dough with your regular shredded mozzarella. Add Parmigiano-Reggiano cheese. Next, cover the pie with the Gruyre cheese. Add sliced tomatoes to cover the pie. Place a few drops of olive oil on your sliced tomatoes. Add basil. Add the following cheeses in this order: Romano, Gorgonzola, provolone, American and caciocavallo. Add oregano and pepper. Last, add fresh mozzarella cheese and the rest of the oil. Cover the pie with aluminum foil. Bake at your regular pizza oven temperature (at least 475) for 4 minutes. Then remove the foil and cook until done (maybe about 8 minutes, depending on your oven temperature). For wood-burning ovens, keep the foil on longer to avoid burning the cheese.
