One can never have enough veggie-based meals in one's culinary repertoire.

Whether it's down to the growing awareness of animal welfare and meat eating's global impact, the numbers of us simply trying to live more healthily or vegetarian mind-control techniques, we're all loving our five a day right now – to the point where ubiquitous coffee chain Pret A Manger noticed such a spike in sales that it is temporarily turning one of its branches meat-free in order to showcase its menu options and trial new items.

1. Cauliflower Fried Rice

Food blog Pinch of Yum has put together a tasty recipe using cauliflower as a base instead of rice for a simple, healthy and easily adaptable dish.

Tofu tends to get a bad press in the West, but it's long been a mealtime staple in the East for good reason. Pickled Plum showcases a dish taking flavour inspiration from South East Asia, with spicy sriracha, sweet honey, garlic and sesame seeds.

This is a dish from London restaurant Polpo, provided for meatfreeweek.org: it's fresh, easy and perfect as a light main, snack or side.

The flavour combination in this straightforward, yet punchy dish took even seasoned chef Yotam Ottolenghi by surprise – he described it as a “light-bulb moment” when he first tasted how two previously familiar ingredients with differing sweet notes could work together so well.

The 15 minutes this recipe takes also includes making your own pesto, which is surprisingly easy and can be, as website Honestly Healthy points out, also used as a dip. Those wanting to pack in more veg could swap the pasta for courgette spaghetti.

6. Poached Eggs in White Wine

If you're as big a fan of poached eggs as we are, this from food journal 101 Cookbooks is for you. The eggs are poached in wine with shallots, and the liquid is then used to make a sauce too. Serve on avocado toast for peak brunch vibes.

Simpleveganblog.com has employed sun-dried tomatoes and tahini in this easy, everyday stew, which you can simply ladle on top of your greens of choice or have with rice for a more filling plate.

The judicious use of a blender and cooked packet rice in this fresh, filling two-dish recipe by Jamie Oliver ensures it's a fast option if you're short on time.

OK, we admit it: the timing on this BBC Good Food recipe is listed as 16 minutes. We're sorry.
