These 4 sweet treats are perfect for sharing this Mother’s Day

Mother’s Day is the perfect time to show the women that look out for and take care of you just how much you love them. And what better way to do it than with a delicious treat that’s made with love.

Whether you want to surprise your grandma with something delicious, make your mum something special or gift the mother hen of your friendship group to something that’s as sweet as they are, the treats we’ve got lined up for you are just perfect for sharing moments of joy. 

Here are four Baileys-infused recipes that are sure to delight this Mother’s Day, and if you’re lucky you might even get to enjoy them too…

1. The crème brûlée

This is the dessert you whip up when you really want to impress people with your cooking skills. Luckily for you, we’re here to show you how to make it a certified showstopper (infusing it with Baileys).

You’ll need:

300ml Baileys Original Irish Cream

300ml double cream

200ml whole milk

6 large eggs

30g caster sugar

1 vanilla pod or 1tsp of vanilla extract

Method:

1. Heat the milk, cream and vanilla pod/vanilla extract on the stove until hot but not boiling. Then take off the heat and mix in the Baileys

2. Whisk the egg yolks and the sugar in a separate bowl until the mixture is pale and thick

3. Pour in the Baileys mixture, mixing well and leave to cool

4. Heat the oven to 160°C, 140°C fan or gas mark 3 and pour the mixture into six ovenproof dishes before placing in the oven

5. Bake for 25 minutes (they will still have a slight wobble in the middle), then cool and chill in the fridge for two hours to set

6. Sprinkle sugar over the top and either pop under the grill for one minute or have some fun with a blowtorch until the sugar is golden and crisp

Serve this beauty after you’ve cooked up her favourite dinner and you’ll be well into her good books for the rest of the year.


2. The chocaccino

If the name ‘chocaccino’ isn’t enough to get you excited about this treat, then we don’t know what will. Perhaps the fact that it’s ridiculously easy to make will convince you. Blenders at the ready…

You’ll need:

100ml Baileys Original Irish Cream

200ml chocolate milk

100ml chocolate sauce

1-2 scoops of crushed ice

1-2 shots of cold espresso

Handful of crushed honeycomb

Handful of coffee beans (optional)

Method

1. Blend all the ingredients together and get some pretty glasses ready

2. Pour into the glass (right to the top), drizzle with chocolate sauce and sprinkle with crushed honeycomb

3. Top with coffee beans for extra decoration and admire your edible piece of art

As Mother’s Day falls on a Sunday, we have no qualms about serving this up as an afternoon treat - it’s the perfect thing to sip on after a wholesome walk. After all, it’s always 5pm somewhere.

3. The salted caramel cremella

Who doesn’t love chomping into a good doughnut, especially when it’s filled with a generous scoop of homemade Baileys Salted Caramel ice cream?

Now, this recipe does take a little more prowess and focus in the kitchen. But not to worry, we’ve broken it down for you into a few simple steps below…

You’ll need:

For the soft scoop Baileys Salted Caramel ice cream

100ml Baileys Salted Caramel

600ml double cream

100g all butter mini fudge cubes

397g can of condensed milk

397g can of caramel

For the doughnuts and decorations

6 chocolate or vanilla doughnuts (or a mix of the two)

Finely chopped pistachios

Crushed freeze-dried raspberries

Method:

1. For the ice cream, put the condensed milk into a large bowl and whisk until large peaks form and then pour in the Baileys Salted Caramel until well combined

2. Fold in the most of the mini fudge cubes then fold in the caramel until it’s marble throughout the mixture

3. Spoon the ice cream mix into a container and freeze for four to six hours until soft but firm

4. Rip open the doughnuts so they’re split in half, add a big scoop of your homemade ice cream and squish on the doughnut lid

5. Put the pistachios and raspberries on separate plates and roll the open side of the doughnuts through your choice of topping

6. Decorate with fudge pieces and serve immediately

We don’t blame you if you’re not keen to share these beauties. We wouldn’t want to either.

4. The biscuit spread iced latte

If your mum can’t finish the day without a good brew and a biscuit, she’s bound to be impressed by this glorious creation.

And as deceptively fancy as it looks, we can assure you that it’s actually very easy to make. 

You’ll need:

50ml Baileys Original Irish Cream

1tsp biscuit spread

Double shot espresso

Ice

Whipped cream

Biscuit crumbs

Method:

1. Combine 1tsp of biscuit spread and a double shot of espresso in a glass and mix together

2. In a separate glass, add ice, your milk of choice and 50ml of Baileys

3. Pour the biscuit spread and espresso mixture into the ice, milk and Baileys

4. Top with whipped cream, biscuit crumbs and serve away

All mums love coffee-based treats, right? Well, if your mum does, this indulgent iced latte is the perfect substitution for her evening cuppa.

Whether you’re trying your hand at the salted caramel cremella or putting a twist on a classic with the choccacino, it’ll be impossible for her not to be impressed by these Baileys-infused treats. 

In fact, she might even like them so much that she won’t want to share…
