Serves: 1

This crisp twist on a classic cocktail from Torstig founder Emmi Edwards combines non-alcoholic amaretto spirit with a bitter botanical elixir and sharp citrus to create a taste explosion. The elixir is unpasteurised and made from a base of apple cider vinegar, making it extra friendly for your gut microbiome.

Ingredients

For the mocktail:

  • 50ml 0.5% amaretto alternative
  • 12.5ml unpasteurised tonic elixir (Botivo)
  • 1 lemon
  • 1 orange
  • 5ml agave syrup
  • 15ml aquafaba
  • Ice cubes

To serve:

  • Maraschino cherry or orange slice

Method

1. Cut your lemon into halves and orange into quarters.

2. Mix together the amaretto, tonic elixir, agave syrup and aquafaba with one half of a lemon and a quarter of the orange in a shaker with ice.

3. Strain into a lowball glass, making sure to catch all the foam.

4. Serve with a maraschino cherry or thin slice of orange.
