Eat your way to better sleep with this tryptophan-rich courgette and tofu velouté soup

There’s no excuse for skipping dinner when you get home late and exhausted – this dish can be whipped up in just 15 minutes. Bon appétit!


After a long day, the last thing you want is a heavy meal sitting in your stomach for hours, preventing you from sleeping. However, you don’t want to go to bed hungry either, so why not whip up this soup, which is light, quick to make and might just help you sleep better.

How so? Well, tofu contains tryptophan, which is an essential amino acid that plays a role in the production of serotonin (the happy hormone) and melatonin (the sleep hormone). The vitamin B6 in courgette is also involved in the production of these hormones, so this soup has the potential to make you one happy, well-rested soul. Lest we forget courgette’s high vitamin C content, which will help cells repair while you’re sleeping like a baby. A great post-workout feed? We reckon so.

Add some pumpkin seeds on top if you want an extra boost of tryptophan – sweet dreams!

Courgette and tofu velouté soup from One-Pot Healthy by Sabrina Fauda-Rôle

Ingredients

Serves: 4

600g (1lb 5oz) courgettes, cut into 2 cm rounds

200g (7oz) silken tofu

1 onion, thinly sliced

12 mint leaves

1 garlic clove, chopped

1 vegetable stock cube

500ml (17fl oz/2 cups) water

Freshly ground black pepper

Method

1. Put all the ingredients in the saucepan and cook over a medium heat for 10 minutes. 

2. Blend until smooth. Serve hot.
