Boost your fibre intake with these oaty, fruity crumble bars – perfect for breakfast

These fruity crumble bars are the perfect way to boost your fibre intake - oaty, delicious and nutritious. 


We’re more clued up on nutrition than ever before, so it might come as a surprise to learn that only 9% of adults in the UK hit their daily fibre intake goals. That’s concerning because, as well as being vital for digestion and overall gut health, fibre can lower our risk of heart disease, type 2 diabetes, stroke and bowel cancer.

It’s clear that fibre packs a real punch nutritionally speaking, and our gut microbiome loves the stuff. And the good news is that it’s easy to up your intake by simply including plenty of wholegrains, fruits and vegetables in your diet. 

These bars are a great place to start. They’re packed with wholegrains, fruit and oats and each bar contains around 6g of fibre (20% of your recommended daily intake). Plus, they’re simple to make in advance and will keep for a few days in an airtight container. 


Apple and blackberry oaty crumble bars

Ingredients 

1 Bramley cooking apple, peeled, cored and cut into small cubes (approx 100g)

150g frozen blackberries

100g oats

200g light brown sugar, plus 1 tbsp for filling

250g wholemeal flour, plus 1 tbsp for filling

1 egg

125g unsalted butter, melted

½ tsp mixed spice (optional)

Method

1. Preheat the oven to 180°C.

2. In a small mixing bowl, combine the cubed apple and frozen blackberries with 1 tbsp of the light brown sugar and 1 tbsp flour. Set to one side.

3. In a larger mixing bowl, combine the oats, the rest of the light brown sugar, flour and mixed spice (if using) with a spoon. Mix in the egg and melted butter with the spoon, then get your hands in the bowl and bring the mixture together until it forms clusters.

4. Pour two thirds of the crumbly mixture into a prepared square tin and lightly press down with your fingers to create an even layer. 

5. Spread the apple and blackberry mixture on top, then sprinkle the remaining third of the crumble mix over the top (don’t worry if there are gaps, you want to see the fruit coming through).

6. Place in the oven and bake for 35-40 minutes until golden on top and the apple is cooked through. 

7. Leave to cool before portioning into eight bars and serving.
