Craving something cold and sweet? This berry fro-yo takes 5 minutes (and is full of gut health benefits)

Cool down with a bowl of vitamin C-rich fro-yo from Melissa Hemsley’s new book, Real Healthy.
This has to be one of the speediest sweet treats out there. Ready in five minutes (there’s no freezing time), these bowls of frozen yoghurt are packed with vitamins, gut-healthy bacteria and healthy fats. All you’ve got to do is chuck the ingredients into a food processor, and bingo – a cold, crunchy, fruity dessert awaits.
Yoghurt is a brilliant probiotic, meaning that it’s full of good gut bacteria. Berries are prebiotic-rich: they contain fuel that probiotics like to feed on. So mixing the two makes for a seriously powerful gut-healthy dish.
You could use any berries or frozen fruits, but choosing a bag of mixed berries that includes redcurrants makes for a stronger flavour. August is blackberry season in the UK, so if you want to prep ahead, go picking the day before, pop your haul into the freezer and then make this summer bowl the next day.
The recipe suggests topping with chopped pistachios or tahini (both full of antioxidants and anti-inflammatory compounds), but you could also drizzle over runny almond butter and raw cacao nibs.
Ingredients
- 300g frozen berries or frozen (pitted) cherries
- 150g thick yoghurt or your favourite plant-based option
- 2 tbsp honey or maple syrup
- A little pinch of sea salt
Method
1. Put all the ingredients in a food processor and blitz until just combined, scaping down the sides once or twice as needed.
2. Be careful not to overmix, otherwise it will turn runny.
3. Serve immediately with any toppings you like.
